Ginger Sesame Vegetable Stir-Fry

  • 1 Β½ teaspoons freshly grated ginger
  • 2 teaspoons sesame seeds
  • ΒΌ cup soy sauce
  • 2 cloves garlic, minced
  • Juice of Β½ lime
  • ΒΌ cup olive oil
  • 2 bunches broccolini, in florets
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • Β½ red onion, thinly sliced
  • 4 oz mixed gourmet mushrooms
  • 1 cup fresh or frozen snow peas
  • 3 cups cooked brown rice

Directions:

  1. In a small bowl, whisk together ginger, sesame seeds, soy sauce, garlic, lime juice, and olive oil to create a flavorful marinade.

  2. Toss the chopped vegetables in a large bowl with the ginger-sesame mixture until well coated.

  3. Heat a large skillet or wok over medium heat. Add the vegetable mixture.

  4. Cook, stirring occasionally, for about 15 minutes until the vegetables are tender and slightly caramelized.

  5. Serve hot over a bed of fluffy brown rice.
