Indulge in the rich, velvety goodness of our creamy acorn squash soup, delicately spiced with nutmeg and cinnamon. This delectable vegetarian delight captures the essence of fall in every spoonful.Β Acorn Squash Soup is a low-fat recipe that can be made hot in a Vitamix blender.


Used in this Recipe:

Acorn Squash Soup

Ingredients:
- 2 cups of chicken broth
- 1/2 cup of low fat evaporated milk
- 1/2 medium acorn squash, cooked, peeled, and seeded
- 1 teaspoon of maple syrup
- a pinch of nutmeg
-1/4 teaspoon of ground cinnamon
- salt and pepper to taste
Directions:
  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 4-5 minutes or until heavy steam escapes from the vented lid.
