Healthy Summer Mediterranean Salad Recipe | Easy & Delicious

Looking for a fresh, flavorful, and easy-to-make summer salad? Our Summer Mediterranean Salad is my all-time favorite recipeβ€”simple, nutritious, and packed with vibrant flavors. I make this salad at least once or twice a week, and it’s become a staple in my healthy eating routine. Compared to store-bought Mediterranean salads, homemade is always better, especially when you customize it to your taste!

Want to elevate this salad? Add in fresh tomatoes, crisp cucumbers, or even grilled chicken for extra protein and flavor.

Ingredients:

  • 1/2 red onion, sliced into 1-inch pieces
  • 1/2 sweet bell pepper, diced
  • 2-3 cups fresh spinach
  • 1 tablespoon low-fat feta cheese
  • 1/3 cup rotini or penne pasta
  • 1 teaspoon vegetable oil
  • 2 tablespoons green goddess salad dressing

How to Make This Delicious Mediterranean Salad:

  1. Cook Pasta: Bring a small pot of water to a boil. Add pasta and cook until just tender (al dente). Drain and rinse with cold water to cool.
  2. SautΓ© Onions: In a small pan, heat vegetable oil. SautΓ© sliced red onions until tender and fragrant.
  3. Prepare Veggies: Dice the bell pepper while pasta and onions cook.
  4. Assemble & Serve: In a bowl, combine spinach, sautΓ©ed onions, peppers, feta, pasta, and drizzle with green goddess dressing. Toss gently and enjoy a refreshing, healthy salad perfect for summer!
