Overview

Use it for peeling, trimming, and slicing your small ingredients like fruits, vegetables, and even meat. Miyabi knives are handmade in Japan. They use traditional techniques to develop a strong body and a scalpel-shape blade. Miyabi Kaizen blade cores are made of a VG10 steel, and are encased by 64 layers of Damascus for an immaculate finish. The blades are then put through a special ice-hardening process to maximize durability of the steel, creating a Rockwell hardness of 60. Miyabi Kaizen knives feature a Micarta D-shaped handle, complete with red spacers, a mosaic accent and an end cap containing the Miyabi logo. This paring knife is lightweight and versatile, allowing chefs to make swift movements in a hurry. It will be your go-to tool for many years with proper care.
