Overview

The 7" Miyabi Birchwood Santoku Knife is a fantastic addition for every kitchen. A santoku knife is the combination of a chef’s knife and a meat cleaver, making it very versatile tool. The word santoku translates into “three good things” as it can chop, dice, and mince food easily. Miyabi Birchwood blades have a micro-carbide SG2 cutting core with 101 layers of Damascus for a beautiful finish. The SG2 core is then ice-hardened to a Rockwell hardness of 63 for corrosion resistance, flexibility, and enhanced hardness. Every Miyabi knife is handmade in Japan, using traditional knife-making techniques for a strong body and an extremely sharp blade. Miyabi Birchwood handles are made of a beautiful Karelian (Masur) Birch, complete with a mosaic pin, red spacer accents, and a steel cap. The handle’s design provides a comfortable grip that won’t slip during use. Miyabi Birchwood knives are very dependable pieces of cutlery.
