Shun Classic 6" Kiritsuke Knife


Handcrafted in Seki City, Japan, the 700-year-old center for samurai swords, the Kiritsuke knife is the master chef’s most essential knife. This 6” Kiritsuke knife from Shun is the perfect knife for slicing and push-cuts, and easily makes thin cuts of meats and fish as well as precision cuts for vegetables. The blade features a slight curve for easy carving and rocking cuts. The clipped tip makes the blade easy to control and more precise cuts. Made with VG-MAX super steel, the ultra-durable blade is crafted from 16 micro-thin layers of high-carbon steel on each side, creating a rippling effect, similar to a Damascus-style knife. With it’s enhanced edge-retention and a Rockwell Hardness of 60, this blade will retain its factory edge longer than other, less sturdy knives. Like all Classic Shun knives, the blade is sharpened to a 16° double-bevel angle, and the full tang provides superior strength and balance from handle to tip. The ergonomic handle is made from moisture resistant PakkaWood. The Ergonomic D shape of the handle allows for more comfortable handling and holding. As an NSF-certified knife, you can rest assured that this knife meets the strictest safety standards for use in professional kitchens. Shun’s Classic Series offers the widest assortment of traditional Japanese and European blade shapes and contemporary designs. At first glance, you’ll notice instantly the beautiful waved pattern on the blade which resembles a combination of tree-rings and ripples in water. This form of Kasumi-style knife making similar to pattern Damascus, or in Japanese suminigashi (“ink pattern”), is not only visually appealing but actually allows the blade to slide through food easier. This variation of pattern Damascus is formed by folding, welding, grinding, and polishing 32 layers (16 per side) of softer steel (SUS410/SUS431) that protect and support the VG-10 stainless steel core. The D-shaped ebony PakkaWood® handle fits perfectly in the hand and stabilizes the blade to prevent turning.

Excellent workmanship clearly shows in this knife. I couldn't believe that a knife could be that sharp. It is really good quality.
