Shun Blue 6" Utility Butcher Knife

Overview

The Blue Steel Utility Butchery Knife is Shun's version of an all-purpose knife, similar to a Chef's knife. This knife is fit for specialty jobs like those related to butchery, but is still able to handle everyday tasks like chopping, mincing, dicing or vegetables and fruits. The Utility Butchery Knife has a 6 inch blade. Like all the knives in the Blue Steel line, this knife is constructed using a traditional Japanese san mai design. San mai literally means three layers; the Blue Steel knives are made from a "blue" carbon steel cutting core between layers of mirror polished stainless steel. The cutting core contributes to the sharpness of the blade and its superior blade retention. This core has a 61 rating on the Rockwell Hardness scale. The handsome blade is complimented by a gray PakkaWood handle. Includes sheath. Handcrafted in Japan. Lifetime Warranty. Shun item number VG0010.

These knives were made using san mai construction, which consists of a "blue" carbon steel core interposed between two layers of shiny, polished stainless steel. These knives have all the benefits of carbon steel without the hassles of maintenance usually associated with carbon steel knives. The Blue Steel knives feature knife blade shapes that excel at preparing or cutting proteins. Chef Cosentino is known for his work with proteins. Each knife blade displays a shiny, mirror polished stainless steel finish accented by a gray PakkaWood handle.
