Overview

Shun's Blue Steel Kiritsuke Knife is impressive to look at, but even more impressive to watch when in the right hands. The Kiritsuke is known as a master chef's knife and takes a decent amount of practice and skill to use this knife to its full potential. It should be noted that this knife is NOT a traditional Chef's knife and does not cut like one, either. The Kiritsuke will not "rock through" cuts, which takes a little getting used to. Once mastered, you can use the Kiritsuke for almost any job in the kitchen. Expert Japanese chefs typically use a Kiritsuke for anything from slicing and dicing vegetables to working with boneless meats and much more! The Blue Steel cutting core of this knife is sandwiched between layers of stainless steel. This combination of metals yields a blade with a 61 hardness rating on the Rockwell Hardness Scale. The Kiritsuke and other Blue Steel knives are ultra sharp and retain their sharpness. Features a gray PakkaWood handle and comes with a Japanese-style sheath. Handcrafted in Japan. Lifetime Warranty. These knives were made using san mai construction, which consists of a "blue" carbon steel core interposed between two layers of shiny, polished stainless steel. The core has a 61 Rockwell Hardness rating, which provides incredible sharpness and edge retention. These knives have all the benefits of carbon steel without the hassles of maintenance usually associated with carbon steel knives. The Blue Steel knives feature knife blade shapes that excel at preparing or cutting proteins. Chef Cosentino is known for his work with proteins. Each knife blade displays a shiny, mirror polished stainless steel finish accented by a gray PakkaWood handle.
