The Marshmallow is a sweet chewy treat that kids really get into. They are used in S’mores, Peeps, Rice Krispie treats, Rocky Road Ice Cream, Mallomars, candied yams, and to top off hot chocolate. Americans alone eat about 90 million pounds of marshmallows a year! The marshmallow is a mixture of sugar, corn syrup, water, gelatin(pre-softened in hot water), dextrose, and flavorings. It is whipped to a spongy consistency. Traditionally, the recipe used an extract from the mucilaginous root of the marshmallow plant; it’s more like a shrubby herb instead of gelatin. The Mucilage was actually used to soothe sore throats! Marshmallows are no longer made with the root because of the expense. The most common way kids enjoy these sticky sweets is to apply a few to a stick and slowly turn them over a campfire. This heating process allows the outer layer to caramelize and form a liquid beneath it. A great recipe for a S’more is the bottom layer is a graham cracker, a half a chocolate bar,TWO toasted marshmallows, the other half of a chocolate bar, and a graham cracker to top it off! That one’s on me!
