BEVERAGES- Hot or Cold, Aspen Mulling Spices with: - combination of apple, cranberry, and orange juices - mixture of gingerale and orange and lemon juices - grapefruit juice warmed in the microwave - cranapple juice with honey and ginger (a colorful holiday drink) - Hi-C wild berry drink(kids love it) - fruit smoothies (get out the blender); delicious in an apple granita - club soda and apple cider on ice (for a refreshing non-alcoholic cocktail) - coffee (a subtle spiciness) or cold spiced coffee; sprinkle it on cappuccino - hot chocolate; egnog - combination of apple cider, pear juice & sparkling water - garnish with raspberries - hot Dr. Pepper (seriously, it's good) - apple cider and ginger brandy - Tuaca liqueur with hot apple cider - hot buttered rum - white wine with thin slices of lemon - Southern Comfort, sake or Apple Jack - Wine combined with 1 bottle dry white table wine, 1 bottle white grape juice, 1/2 bottle port and 1 carton of Aspen Mulling Spices for a winning drink.
BAKED GOODS- Generally, any sugar or spices the recipe calls for can be substituted with equal amounts of Aspen Mulling Spices. Making Fudge in Microwave Oven - 3 Tbsp. Butter
- 1/4 cup Milk
- 1 carton Rich & Creamy Chocolate Fudge Mix
Place butter in a 1 quart microwave-safe cup or bowl. Do not use soft butter. Microwave on full power until butter is melted. Add milk and fudge mix. Stir until completely moistened. Microwave on full power for 90 seconds, stirring after each 30 seconds. DO NOT BOIL. Pour into lightly buttered serving tray or candy mold. Refrigerate 2-3 hours to firm quickly or let stand at room temperature until firm. Note: Due to variations in power outlet and heating patterns of the microwave ovens, cooking times may vary. For a special treat, sprinkle Aspen Mulling Spices, nuts and/or chocolate chips after pouring into serving tray. Making Fudge on Stove Top - 3 Tbsp. Butter
- 1/4 cup Milk
- 1 carton Rich & Creamy Chocolate Fudge Mix
Melt butter in heavy saucepan* over low heat. Do not use soft butter. Remove from heat. Add milk and Fudge Mix. Stir until completely moistened. Place over low to medium-low heat. Cook for 4 minutes, stirring constantly. DO NOT BOIL. Pour into slightly buttered tray. Refrigerate 2-3 hours or until firm. *A double boiler can be used for better temperature control. Place the top section of the double boiler over boiling water. Proceed as directed above. For a special treat, sprinkle Aspen Mulling Spices, nuts and/or chocolate chips after pouring into serving tray.

Using Spice BlendsCider - 1 gallon Apple Cider
- 1 carton Spice Mix
Serve hot or cold. TeaSpiced ToddyWineMore Delicious Ideas in Beverages - Add to a drink of equal parts of apple, orange and cranberry juice mixed and warmed.
- Stir in warmed grapefruit juice.
- Add to a mixture of ginger ale and cranapple juice to taste.
- Mix with wild berry drink and club soda.
- Mix with fruit yogurt, orange juice, banana, pineapple and ice in a blender.
- Add to sun teas (regular or herbal).
- Sprinkle on cappuccino hot milk froth.
- Add some to hot apple cider and Tuaca Liqueur.
- Sprinkle spice on Southern Comfort over ice.
- Stir into hot apple cider and rum.
- Mix to taste with hot pear juice.
- Add to club soda and apple cider on ice.

Apple Pie (Lisa’s recipe)
7-8 apples, sliced (I use Red Rome or Jonathans) juice of ½ lemon ¼ C Aspen Mulling Spices ½ C brown sugar—les if apples are sweet ¼ C butter cut up and dotted in the apples 1 T flour—a little more if the apples are juicy --Mix all ingredients and place in a regular double pie crust recipe. Flute top layer. --Bake at 400° for 10 minutes; then reduce to 350° for 50 minutes. Recipe from Aspen 2009 newsletter.

Mulling Muffins

Raisin Muffins a la Aspen (From Linda Brand, Collectibles, Rome, GA)
2 C Bisquick baking mix 1 egg 2/3 C milk ½ C brown sugar 1 handful raisins 3 t Aspen Mulling Spices ½ to 2/4 C oatmeal 2 T Wesson oil --Mix all ingredients together and put mixture in slightly greased 12-cup muffin tin. Bake at 400° for 15-18 minutes or until golden brown. High Altitude: heat oven to 425°

 I am someone who happens to love Egg Nog all throughout the year, not just during the Holiday season. Since it is typically extremely hard to find Egg Nog during the summer months, I turn to Aspen Mulling Spices Egg Nog Mix for my fix. The first time, I ordered it, I was a bit worried that I would be able to tell the difference from "regular" Egg Nog. I was extremely surprised when I drank my Egg Nog after mixing the mix with milk. It was delicious and I could hardly taste the difference! Now, I make sure that I always have a few boxes around the house, so I can always have Egg Nog whenever I need my fix.

I love carrot cake but I have not found a good recipe for one. My mother is a great cook and I was visiting her the other day and asked her if she had one. I was in luck because it just so happened that she had a bit of a trick to getting her carrot cake to turn out so well. She mentioned to me that one of her recipe ingredients was Aspen Mulling Spices. This is what gave it a spice flavor that I was so eagerly desired. Well I went home after our visit at attempt her recipe it goes as follows: Mix in a bowl: 3 eggs 1 ½ cup of EVOO 1lb of brown sugar 2 cups of diced carrots 1 small can of crushed pineapple and juice 2 table spoons of vanilla 3 cups of flower Dash of salt 1 tsb of baking soda 1 tsb of baking pwder ¼ cup of Aspen Mulling spices Bake @ 350 for 35 mins It turned out wonderful, I finally have a carrot cake recipe that I can be proud of and the not so secret trick turned out to be in the spice. Who knew?

Last Friday I was given a sample of Aspen Mullen spices to try. The box had four drink recipes listed on the side: Wine, Brandy, Tea and Cider. Of those four I currently had tea in my possession and figured I could try it out. It was a very easy recipe 5 oz of Aspen Mulling Spices to a gallon of tea. It added a very interesting kick to the tea that I was not expecting. It was a very nice treat that I enjoyed it hot while watching the rain come down in my back yard. As it is August it may be a little too hot to fully enjoy this drink now but I will certainly have to try this again in the cooler time of year. If you are not an avid tea drinker this may add the little bit of flavor to spice up your tea a notch. I am sure that adding this to the brandy or wine will be a doubly warming treat as well!

How to Fix Mulling Spice Recipe - The Drink Basic, common procedure to prepare a mulled wine is mainly uncomplicated: combine 1/4 cup of the blend with two cups of wine (red or white!), apple cider or juice, cranberry juice, or other beverages to your liking. When the recipe does not specify sugar, it is facile to add it to beverage after, according to individual tastes, or swap it with brown sugar, honey, molasses, sweetener etc; yet, a good , yummy mulled wine should be sweet. Heat and simmer on stove for at least twenty minutes until the spices infuse the liquid but - important! - don't let the wine boil. Occasionally gently stir the mix, then serve warm to moderately hot. Do not get daunted if you don't like it straight off - experiment, test and re-test! Try several diverse combinations, alter quantities, ingredients and/or additions, until you are sure your mulled wine is darn good. To prevent sediments in the cup, you might want to filter the drink through the strainer. Moreover, you can wrap spice mixture in the bag, made of four inch square of muslin with gathered corners, securely tied.
 Make an exquisite mulled beverage with: Cider: apple or cherry Juice: apple, apricot, cranberry, orange, pear, pineapple, pomegranate or mixed as you like Tea: black Wine: red or white
Extra specials: brandy, rum, other spirits at your liking.

Mulled Wine & Other Recipes Your imagination is the limit! Mulled wine - Red or White 1 bottle of wine 2 cups water - optional ½ cup mulling spice blend ¼ cup of sugar, brown sugar or substitute
 Mulled cider - makes 8 servings 8 cups apple cider or apple juice 1 cup of spice blend 8 one-inch cinnamon sticks for garnish, add extra each in one cup
Mulled Spiced Tea - makes 8 servings 8 cups of boiled water 4-6 black tea bags 1 teaspoon of mulling spice blend Steep the blend in ready made tea for about five minutes, then heat again and simmer for 20 minutes; sweeten with one tablespoon of honey (optional).

Apple Pie 7-8 red rome or jonathan apples, juice of 1/2 a lemon, 1/4 cup Aspen Mulling Spices, 1/2 cup brown sugar, 1/4 cup butter (cut up and dotted on apples), 1 T flour- a little more if the apples are juicy Mix all ingredients together. Make a double pie crust recipe. Place the bottom pie crust in the plate, fill with apple mixture, top with the other half of the pie crust, vent and flute the edges. Bake at 400 degrees for 10 mins and reduce heat to 350 degrees for 50 mins.

As a college student living in a small dorm I do not have access to a stove. I love chocolate, especially fudge and cooking and wanted to find some way I could share a treat with some of my hall mates and friends. I called up my grandmother and this is what she suggested:

It is that time of the year again, when the days are getting shorter and the weather is getting colder. You have to go and grab those heavy fleece blankets, mittens and jackets out of their hidding place in the attic. Here at JL Hufford, it has been getting colder as well. I have grabbed out the snuggie and have brewed up a cup of Aspen's Caramel Apple Cider. It is absolutely delicious! It is also extremely easy to make! All you have to do is add between 6 and 8 ounces of either hot or cold water and you are done. Make sure that you use a cinnamon stick to stir it with.

 It is almost that time of the year again, when we go out and buy candy for the treat-or-treaters and carve pumpkins. This pumpkin bread and muffin mix is a hit for a Halloween party coming up or even for Thanksgiving!
