The Blue Steel Menkiri Knife is a multi-purpose knife that is especially equipped for cutting protein and noodles. This knife has a long, straight cutting edge and a bit of weight to it, making it easy to cut noodles straight to the board with a slight forward motion. The Blue Steel line is made from three layers-- a "blue" carbon steel cutting core between two layers of polished stainless steel The core registers as a 61 on the Rockwell Hardness scale. This blade is ultra-sharp and stays that way! The Blue Steel knives have the traditional Japanese PakkaWood handles in gray, and come with a sheath. Handcrafted in Japan. Lifetime Warranty. Shun Blue Steel Features

The newest line of high-end cutlery from Shun, the Blue Steel collection, was developed with the help of award-winning chef, Chris Cosentino. These knives were made using san mai construction, which consists of a "blue" carbon steel core interposed between two layers of shiny, polished stainless steel. The core has a 61 Rockwell Hardness rating, which provides incredible sharpness and edge retention. These knives have all the benefits of carbon steel without the hassles of maintenance usually associated with carbon steel knives. The Blue Steel knives feature knife blade shapes that excel at preparing or cutting proteins. Chef Cosentino is known for his work with proteins. Each knife blade displays a shiny, mirror polished stainless steel finish accented by a gray PakkaWood handle.
