The 4.5 Inch Honesuki from Shun's new Blue Steel collection has been crafted specifically for removing the bones from meat. This knife features a traditional triangular blade shape and stiffness for this purpose. The Blue Steel line is made using a san mai construction, which means it has 3 layers.  The "blue" carbon steel cutting core is sandwiched between two layers of stainless steel. The blade has a 61 rating on the Rockwell hardness scale, offering amazing sharpness and incredible edge retention. This knife also features a gray Japanese PakkaWood handle that was designed for maximum comfort and a non-slip grip. The Honesuki also comes with a Japanese-style sheath. Shun item number  VG0011

These knives were made using san mai construction, which consists of a "blue" carbon steel core interposed between two layers of shiny, polished stainless steel. The core has a 61 Rockwell Hardness rating, which provides incredible sharpness and edge retention. These knives have all the benefits of carbon steel without the hassles of maintenance usually associated with carbon steel knives. The Blue Steel knives feature knife blade shapes that excel at preparing or cutting proteins. Chef Cosentino is known for his work with proteins. Each knife blade displays a shiny, mirror polished stainless steel finish accented by a gray PakkaWood handle.
