For those who find the standard 8 inch Chef's knife too big and heavy and prefer something smaller and compact, the Shun Ken Onion 6" Chef's Knife may be perfect for you. Still capable of the same tasks as the longer Chef's knives, the 6 inch Ken Onion is better suited for smaller to medium sized fruits, vegetables, meat, breads, and other foods. The knife has many tasks on its repertoire, and excels at each: chopping, mincing, slicing, and dicing. The razor-sharp edge cuts through anything with ease using the 16° double-bevel angle. Shun Ken Onion Series Features Named after the series’ designer Ken Onion, this knife line is very similar to the Classic Series, but with many added benefits. They both are constructed Kasumi style - 32 layers (16 per side) of softer steel (SUS410/SUS431) which are folded, welded, grinded, and polished together, protecting the VG-10 stainless steel core. The blade is then blasted with tiny beads of glass to reveal the ripple effect/tree ring design, which is similar to pattern Damascus. The difference with this line, however, is that Ken Onion, predominantly known for designing pocket knives, stepped outside his realm and into the culinary world with one goal: making cutlery more comfortable for people of all sizes. Starting with the Pakkawood® handle, he curved and widened the grip for better control and a looser pinch on the blade, relieving tension in the hand and forearm. Next, the belly of the blade was curved as well so people of all heights were utilizing the glide of the blade to its fullest potential. You’ll also notice a rounded bolster, also making the knife more ergonomic.
Shun Technology Highlights- VG-10 stainless steel: Adds cobalt for strength and hardness, vanadium for superior edge retention. The higher density allows the steel to be tempered to a higher Rockwell (60-62). Requires minimal care to avoid corrosion. Razor-sharp blade and phenomenal edge retention.
