Resembling the western carving or slicing knife, the Yanagiba is Japan's traditional, long and thin blade designed to cut paper-thin slices of fish and meat. Meaning "willow blade," the Yanagiba is a necessity for preparing sushi and sashimi. The knife should be pulled through the food so juices are retained and the cuts stay clean. Shun's Classic Pro 8.25" Yanagiba Knife features a 16° single bevel edge which not only glides through food, but is effortless to resharpen on a whetstone. With a slightly hollow ground back to the blade, food slides off on its own and won't stick to the knife. Handcrafted in Japan. Lifetime Warranty. Shun item number VG0004.

Shun Classic Pro Series Features


The Classic Pro cutlery line features traditional Japanese knife shapes along with a unique, graffiti-etched blade. Named for the professional chefs of Japan, this line is for the true Japanese culinary enthusiast. The knives are true to their origin and feature the traditional single-bevel edge, which is razor-sharp and precise to ensure the desired texture of your food. With an extra wide shinogi, or blade bevel, sharpening the Shun Pro line on a whetsone becomes almost effortless. The back of blade is concaved across the entire length (hollow ground), creating tiny air pockets which prevent food from sticking and allows for proper and precise cuts. The blade is constructed from one solid piece of VG-10 steel (Honyaki style), unlike the other Shun lines which are clad (Kasumi style). This not only creates a stronger knife but better supports the single-bevel edge. Finally, you’ll notice the beautiful blade design, unique on every knife, which is acid etched into the steel and sports the Shun logo. This blade etching is similar to a signature left by traditional knife makers to identify them when producing custom knives.
