For a classic Japanese blade with scalpel-like precision, the Shun Classic Pro 6.5" Deba Knife won't disappoint, performing the same tasks and more as the chef's knife. The Deba blade is primarily used to prepare fish, but can make precision cuts on other types of meat, as well as preparing sushi or sashimi. Resembling the offspring of the chef's knife and cleaver, chefs also use the Deba Knife for chopping, slicing, and mincing. The single-bevel blade is sharpened on one side, with a slightly hollow-ground back making food slide off easily. Handcrafted in Japan. Lifetime Warranty. Shun item number VG0002.

Shun Classic Pro Series Features


The Classic Pro cutlery line features traditional Japanese knife shapes along with a unique, graffiti-etched blade. Named for the professional chefs of Japan, this line is for the true Japanese culinary enthusiast. The knives are true to their origin and feature the traditional single-bevel edge, which is razor-sharp and precise to ensure the desired texture of your food. With an extra wide shinogi, or blade bevel, sharpening the Shun Pro line on a whetsone becomes almost effortless. The back of blade is concaved across the entire length (hollow ground), creating tiny air pockets which prevent food from sticking and allows for proper and precise cuts. The blade is constructed from one solid piece of VG-10 steel (Honyaki style), unlike the other Shun lines which are clad (Kasumi style). This not only creates a stronger knife but better supports the single-bevel edge. Finally, you’ll notice the beautiful blade design, unique on every knife, which is acid etched into the steel and sports the Shun logo. This blade etching is similar to a signature left by traditional knife makers to identify them when producing custom knives.

  • VG-10 stainless steel: Adds cobalt for strength and hardness, vanadium for superior edge retention. The higher density allows the steel to be tempered to a higher Rockwell (60-62). Requires minimal care to avoid corrosion. Razor-sharp blade and phenomenal edge retention.
