Give your dinner an international flair with our new Asian Pasta salad. Long noodles tossed with a slightly sweet and spicy soy vinaigrette. Great as a pasta salad and fantastic as a hot stir fry!
You will need:
1/3 C vegetable oil
3 Tbs hot water
1 red bell pepper, diced
1 can sliced water chestnuts, drained & chopped
2 C cooked chicken, diced (optional)
In a small bowl combine dressing mix with hot water. Stir well to dissolve and let stand for 15 minutes. Add oil and stir until emulsified. refrigerate dressing while boiling pasta. In a large pot, bring 4 quarts of water to a boil. Add pasta to boiling water and cook for 6-8 minutes. Do not overcook - pasta should be quite firm for salads. Drain pasta and rinse under cold water. Toss dressing, pasta, and remaining ingredients together. Chill for 1 hour. Serves 8.
Stir Fry recipe:
You will need:
2 Tbs vegetable oil
1/2 C hot water
12 oz pkg of fresh stir fry vegetables

In a large pot, bring 4 quarts to a boil. add pasta to boiling water and cook 6-8 mins, or until tender. Drain pasta and set aside. combine Asian dressing packet with 1/2 c water. stir until dissolved and set aside. In a large skillet, heat oil over med high heat. saute assorted stir fry vegetables. for 2-3 mins. add dressing mixture and continue to saute until vegetables are tender but still crisp. add noodles and toss until heated thru
