Prima Matera De Buyer’s Prima Matera line of cookware is extremely unique and made for all hotplates, including induction, gas, oven, and electric. It is made out of 90% copper and 10% stainless steel. The line features exceptional ferro-magnetic bottoms that make heating even and balanced. The riveted handle is ergonomic and made out of cast stainless steel. The line also features 2-mm thick copper with stainless steel inside walls and a gloss polished finish.
Why copper? Copper is a fantastic conductor for heat, and it is particularly popular for French cooking and reducing. The reason for copper is, as mentioned, that copper is a great heat conductor: it makes for fast and even cooking within the whole pan—the Prima Matera line will not only heat at the bottom but on the sides as well to acquire a balanced heat distribution, making this copper cookware ideal for fragile preparations (like sauces). De Buyer has now developed a magnetic bottom for this copper and stainless steel cookware to allow for amazing cooking on induction hobs. The reason for the copper on the outside is to allow for heat spreading and the stainless steel inner walls makes for easy care and maintenance. No need for re-plating as traditional tin-plated copper cookware sometimes needs.
Care The copper will change its color with usage, so it is recommended that you use a special copper cleaner to give it its shine back. But never use a metal sponge with it as it will damage the copper. The stainless steel inside is easy-to-clean with a sponge and soap. If you manage to burn your copper cookware, soak for half a day in hot, soapy water. This line is not dishwasher safe, and you want to keep an eye on when you soak it—prolonged exposure may rust your cookware. |
